Beef Jerky

Traditional beef Jerky is lean beef sliced very thinly and slowly dried at a temperature less than 70 degrees.

This may also be salted and spiced to prevent spoilage.

Amber's version is dried, using an evaporator, without removing the fat.

She says that babies love to chew on this food. And for her it's a favourite snack.

Banting Snacks

I've made a carbohydrate-free cracker, based on nuts and seeds. You'll find several recipes online.

I also like to keep some lightly cooked muscles in the fridge. Sardines are also a good stand-by.

Occasionally a little fruit. Quarter of an apple, or a few berries.

Tea or Coffee with butter in it.

Amber O'Hearn - Paleo Diet

Amber O'Hearn holding up a snack she calls Beef Jerky.

Amber has three children, who were all breast fed for a long time, and weaned onto a ketogenic diet. I thought that this was a rather modern idea. Not so. Amber's eldest child is a senior at high school.
